Strawberry Salsa Saves the Day!

Don’t you just love it when things turn out the way you want them to…or even better than your original expectations?!

Well, the day I created this salsa recipe I was experiencing exactly the opposite. From the time I woke up until my head hit the pillow hard, the girls and I struggled to make it unscathed through the moments.

I know, I know…I’m the adult….set the tone, be the example. Well, my parenting strategy started off all wrong.

This summer I’m on a quest for simplicity.  It feels good!

Whether it's in how I spend the day or through the food that fills our plates, sometimes step-by-step directions just aren’t necessary. For the simple things in life, we don’t always need structure, routine or long lists of ingredients. As a beginner to this idea, I’m learning this ‘simple’ lesson little by little and, as my antidotes are so often inspired, a recent time in the kitchen supports my conclusion that sometimes simplicity makes life so much more satisfying.

I know, I know, I'm always touting the benefits of a peaceful pace and a slower style of living. But, I'll be the first to admit that I need my advice as much as anyone! Sometimes we simply cannot escape the day to day, busy list of to dos and places to be on time. I often feel like I'm tumbling from one thing to the next and if it wasn't for my iPhone calendar chiming at me I might forget my own head!

I didn’t know anything about Medjool dates until about two years ago. Boy, was I missing out! Sweet and semi-soft with a tantalizing texture, Medjool dates make regular old pitted dates seem like an exhausted, old weathered cousin.

Gluten Free, Multi-Grain Crackers

Bet you never thought you’d make your own crackers! You know, mix the dough, roll it out as thin as you can, slice them any which way and bake without burning those skinny little buggers. Well, maybe you did think you’d try someday to conquer store bought brands in your own kitchen. Or maybe you already do!
